I work in a pro shop and the majority if my time is taken up with sharpening. That being said I've seen many different types of runners or steels come through the shop. I wanted to know which runners are you not suppose to stone. I know to never stone the black-edge steel but is there any others like step steel for example?

Never stone anything with a coating on it. Step Steel Black, SB Black or Mirror finish, any DLC coating, etc...

Use a ceramic stone on mirror finish. Doesn't do any harm.
