I had a stripped screw in here and the back was completely rusted in as you can sort of see, I have the piece that is missing in the picture, but is it possible to somehow stick it back in and be able to screw a screw back in?

Short answer; yes, the hole is that shape to accommodate the shape of the nut. But any aftermarket back will fit, though it may wobble a bit.
Also, keep it dry and take a screwdriver to it every now and then to make sure it hasn’t seized up like that.
