I've been shooting for a a number of years, and usually always keep a cam with me.
Originally started with Minolta film, but have been shooting Canon Digital for almost the last 10 years.
Here's some of my 'boredom' work...I'll post a portfolio soon enough (I have one but more set for Wedding Clients)
These were shot with a Canon 350D and 50mm f/1.8, but I also have a 1D Mark II and 20D with L glass.

More pics added:
I decided to shoot strictly at night for these:
All shots were ISO 100, f/5.6 - f/8.0 (using 50m f/1.8), 13" - 30" shutter
This was the only one I had to shoot at ISO H at 0.3", dog wouldn't stay still of course.
I'll be shooting more this weekend, I always prefer 3-5 a.m for shooting at night, but the tools to have the lens focus are always impromptu and sometimes takes two people to get it right.
For example, getting the lens to focus on a tree that is pitch black is difficult, so I usually get a glow stick and hang it on the branch and focus on the object, then remove the glow stick and take the exposure.
It is important to use an AF lock for these, you can't afford to have the camera refocus on every shot.
I carry a Surefire to aim at the subject also to "paint" the image in order to brighten and add colour.
Post processing in Photoshop? Not as much as you think, usually just adjusting the highlights.
Low ISO will give us little to no noise as you can tell, but even with at ISO H (3200) on this camera (Canon EOS 20D, there isn't much noise.
that is something handled P&S just cannot handle.
